Meet us at Grappolo contro Luppolo to taste the menu of Colombian chef José Luis Freitas Moròn
In a circuit of enogastronomic evenings organized by Matteo Garberoglio with young chefs hosted in San Marzano Oliveto (Asti), we host at «Grappolo contro Luppolo’s world» the Colombian chef José Luis Freitas Moròn For the next two weekends, from March 8th to March 10th, and from March 15th to March 17th, our guest chef will present a menu based on chicken: “The challenge this time – says Matteo – is to be able to create three dishes using all the parts of a hen. We wanted to concentrate on a main ingredient, with which José will use alternative cooking techniques. We purchase all ingredients in local markets or from farmers from Nizza Monferrato, Canelli and Asti”.
Menu includes onion and chicken parisienne (classic soup made with crunchy chicken breast and chicken heart), batter-fried chicken, coleslaw and corn bread; Arepas (Venezuelan tortillas) with pulled chicken, grilled pepperoni and valeriana salad; “bicolore al ciocolato” (cocoa brownie with solid tangerine sauce).
Grappolo contro Luppolo will open for these evenings at 7:30 pm: menu will be available at the blackboard, drink’s menu include exclusively wines fermented with its indigenous yeasts and dinner will be served until 11:00 pm.
